I love a good afternoon tea party. With an assortment of teas, scones, finger sandwiches, and desserts. I held a small one for my friends last weekend and it was a success! I made cucumber sandwiches, egg salad sandwiches, mini cheese biscuits, chocolate covered strawberries, and blueberry scones. All homemade. It was a little bit of work but fun.
Out of all the things, the blueberry scones were the only things that I had never made before. I was worried that it wouldn’t turn out right, but it actually did. I swiped the recipe from here.
It was quite easy to make. The only thing I had a difficult time with was while kneading, I could feel the fresh blueberries pop, relasing more liquid. That made the dough really sticky and rather hard to work with. I had to add more flour to get it again back to kneading consistency. But the fresh blueberries were worth it. It was delicious and they added the perfect amount of sweet and tart for the baked goood. The recipe calls it for to be cut into 6 pie shaped pieces, but I decided to go with the easier circular shape by tearing them into pieces.
